In Banaue, Ifugao, a town famous for its rice terraces, another kind of industry has taken off – the manufacturing of wooden scooters. Introduced in the 1960s, these simple wooden scooters was invented and adopted by locals as a means of transporting firewood and root crops gathered from the mountains. Today it has become a way of coping with skyrocketing fuel prices. In this webisode, Ian learns finds out how these environmentally friendly handcrafted vehicles are made with nothing more than firewood and twine and finally takes part in a friendly scooter race held amongst the locals!

For centuries, the Pacific oyster also known as the rocky oyster has been cultivated on Kinmen, providing the islanders with a valuable source of livelihood. Trudging through miles of muddy oyster beds, Ian learns the art of harvesting "hanging oysters”— clusters of rocky oysters that grow on nylon strings from 68-year-old Grandma Wang who has been farming oysters for 36 years. As Ian tastes the sweet flesh of oysters harvested with his own hands, he also finds out why they were originally grown on stone blocks and how climate change has led to the decline of oyster aquaculture on Kinmen.

Japanese cuisine is as diverse and complex as its culture and soba noodles made from buckwheat is one of the country’s most popular dishes and revered culinary traditions. In this webisode, Ian gets schooled in the folk art of Japanese country cooking by finding out how to make organic soba using only natural ingredients. Rolling the dough using a 3-foot rolling pin called a nobebo, he also finds out how it is cut into precise strips, dusted with flour and boiled. Finally he learns how when soba is boiled, minerals and amino acids are released into the broth known as sobayu which is drank straight for its numerous health benefits.

The open seas surrounding Toyama Bay, regarded as natural fish keeping pens are where more than 300 varieties of fish species including sardines in the spring, tuna in the summer, and yellowtail in the winter are caught. This is also where Ian takes up the 400-year-old Himi set-net fishing techniques believed to be one of the most environmentally friendly in the world. In this webisode, Ian will learn how nets used to be made of braided straw rope and hemp yarn, with bamboo used for the fishing buoy and floats. Finally he finds out how today fish are targeted by the mesh size of the net, which makes it possible to select the size and species greatly reducing the amount of by-catch.
